Calves will be Veal


This pastoral scene on the left is St. Brigid's Farm near Kennedyville, owned by Robert Fry and Judy Gifford. They have several dozen head of Jersey cows that they raise for milk production. Robert sent these pictures of the bull calves they are raising for veal this year, and we hope to be serving some of this local Jersey veal at the Brooks Tavern early this summer. Small farms producing food that is sold locally - that is what sustainable agriculture is to us. That is what many people believe will help keep small, independent farmers profitable - by creating a local market for their products, and getting the food directly from the farm to the table.
